Beautiful topaz colour with complex volatile aromas of dried fruits, spices and nuts. The palate is elegant and intensely flavoured, with a long and persistent finish enhanced by lively acidity.

Ageing process

Fermentation stopped midway with brandy spirit to leave a naturally sweet fortified wine. The wine, which is a blend of 85% 1991 and 15% 1992, was matured in 700 litre oak casks on ullage to enhance the oxidation process.
